Definition
The early low point on a recorded bean-temperature curve after charging, before the curve begins to rise.
Why it matters
It is a useful landmark for comparing batches, but much of its shape reflects probe response rather than an actual reversal inside every bean.
How it is measured or recognized
Read the minimum displayed bean-temperature value and its time after charge.
Roasting tip
Use it as a repeatability marker, not as a direct measurement of the beans’ coldest internal temperature.
